ive got bookings for the next 4 weekends straight, and 2 large weddings early next year as well as a Car show festival. busy busy!

Trim it, but not a lot. The more briskets I cook, the less I trim.
I dont even shape them a lot now unless the point is massive. If some edges of the flat overcook and turn to chuck, I just use it in burgers etc. So im happy sacrificing a little bit of flat in order to save time trimming.

I made a sweet potato casserole on the grill last week. Came out pretty good.

Wife just bought me a Blackstone griddle for Christmas. Can't wait to try it out. Probably won't do so until spring.
Little tip...if you are interested in one of these Walmart had them black friday and many never sold out of them. Now, many Walmart's are discounting them off the black friday price to get rid of them since it's not the model they carry year round. Black friday price is $174, which is a good deal anyway. If anything less than that shows up for you then it's a really good deal. I got it for $150. It has a hinged lid which is not standard and is like a $60-100 option.

I did my first turkey on the Joe yesterday. I think it was reasinably successful but it seems like my temperature probe was sitting in the coldest part somehow. I probably could have taken it off earlier, so I'll start temping earlier next time. I'll probably try to bump the cooking temp a little and foil the wings to get a little more color/crisp. I thought it would be a little smokier too.

I did a ham in the smoker for the first time on Sunday. Pretty easy cook and totally worth it on the result. Would do again.
