things are finally happening. Smoker is finished and set for delivery next week, and today I am signing an agreement for use of a commercial space!

it is not.
The bloke that built the orange trailer smoker in that article though built my first pit

I can't remember where I left on in here. but the new pit arrived home and I have purchased a food truck.
This lease/agreement for a space in town is currently with local council, and will hopefully be approved next month. Will be serving from the trailer to begin with as a kitchen fitout is not yet possible due to the site being heritage listed.

Anyone run an automated setup on a charcoal smoker? Looking at some of BBQ Guru's options and they look decent.

Made up this platter on the weekend.
We've got pastrami, brisket, pulled pork, pork ribs, beef ribs, turkey breasts, and 3 kinds of sausage. Was a fun cook.
