so I am all set for this BBQ Masterclass with my butcher. Will be a fun day.
I've also got three private events coming up which im very excited for. One is at the golf club, so ill put on a few sides during the day and hopefully feed a few of the golfers during the saturday comp.

The biggest news though is that ive got my council inspection this week. Nervous as drymount. If I pass then I am set to do public cooks.

inspection passed! fully registered now for public and private events.

The butchery and smoking class went well yesterday! Really pushed the capacity limits of my smoker, cooking 45 racks of ribs, 150 chicken wings and 150 cheese and jalapeno sausages.

This question feels insignificant with what Wotta has going on, but does anyone have experience with a Traeger?
Thinking about replacing my WSM.

I have mate, and theyre great. I don't feel right saying this but they are pretty much the best smoker. So easy to use, you get a fantastic result, and you get it consistently too. I often think about buying one.

I also used a WSM a few months back for the first time too. Very impressed.

Thanks for confirming.
The WSM has been great, and it has been fun being challenged to learn the nuances of smoking meat. Ive felt that those learning experiences are a big part of it. Having said that, I want easier.

yeah, I completely get that mate.

So I catered for a party on the weekend for 70 people. Took it out of me! Can definitely understand wanting something easier.
