ended up trying Rudy's when we were in Austin this past weekend. thought it was good especially the moist brisket. potato salad was killer though <3

I too smoked some ribs yesterday and forgot to snap a pic. Curious if people follow the 3-2-1 method or just open smoke them for 3-5 hours to get idea temp? I've used both, and generally prefer them on the longer times vs. shorter times.
pay via paypal, use credit card,file dispute at the 20 day mark if suspicious. don't deal with noobs. don't trade with noobs. request feedback ahead of time. there are lots of good people 'round here.

Personally I never wrap or do the 3-2-1 method. I let them roll for 5 hrs then do the bend check. If it passes I brush with sauce and let them go another 30 mins to an hr.

3-2-1 is the best recipe for overcooked ribs imo. I use a kamado cooker, so I've had issues with the bone side getting too crispy (heat from the bottom) if I go unwrapped the whole time. It varies, but this last one I did something like 3.5-45min-45min . I like a foil boat these days for brisket. I tried that on ribs at least once, but I think the texture ended up better with the full wrap.
