If I am on a shorter than normal timeline with my dough I cheat a little. When I start making the dough I turn my oven on to the lowest setting usually 170 I think. Once the dough ball is coming together I turn off the oven so its just nice and warm but definitely not hot. Let off the initial burst of hot air and then put my dough balls in there to rise with first a regular towel on them and then a wet paper towel on top, helps keep the tops from drying out and getting a little crusty.

Sometimes just a warm oven can help get things moving along.

I was nervous the whole time but my pizza came out amazing.

I ended up kneading the dough a little but and forming the dough two hours before cooking and that's all it took to help it rise. Was gonna do the over trick but didn't have time with cooking the sauce and preheating the stone.

Thanks for the sauce recipe again!

Also, I did the pizza tally and I ended up eating pizza 181 times in 2014. All good pizza, no pizza hut, dominoe's or other chain pizza. Had pizza 20 times in January.
