Well there are, in some cases. But I certainly don't agree that if you can sell a print you can ship it within 2 days. Catered a wedding on the weekend. Great set-up for a home wedding. They had 3 food vendors there plus a bar and a desserts truck.

Unfortunately there is no rainforest in Victoria for the next 7 days, but thankfully there are some cooler days mixed in there.
4 days ago it was 43C / 109F, and windy. The worst conditions.

It's pretty bad. The whole Eastern half of my State is on fire. NSW has been hit the worse, and South Australia has it pretty bad too. It happens every year now, there is just so much bush, and the government doesn't do a whole lot of controlled burning in the colder months. My local area got hit 10...

Pretty horrible. It has been almost a week now. I couldn't imagine it happening to my dogs.

Trim it, but not a lot. The more briskets I cook, the less I trim.
I dont even shape them a lot now unless the point is massive. If some edges of the flat overcook and turn to chuck, I just use it in burgers etc. So im happy sacrificing a little bit of flat in order to save time trimming.
