More importantly, do they come in a gilded box for women to swoon over? Because that works so well for Ladurée.

(I was in Paris in May. Took my lady on a macaroon tour, trying all the *very* best places in Paris. The cuntiest shops I'd ever been in. None were $35/dozen. So...I need to try yours. Bring some to TRPS? :) )

Savory macarons are actually something I'm very interested in making and have done a lot of research on. The problem is the merengue. You need to use sugar to bond the proteins in the egg whites and I can't figure out what I could substitute sugar with that would still create a stable merengue.

As far as the price, once I start selling them the price would likely include free local delivery. So there's that. Also bear in mind you can hardly compare a 1 man operation to a pastry shop that is able to source all of their ingredients wholesale and has a team working solely to churn out a single item.

Decorative boxes are definitely in the works! Maybe I'll commission Audrey Kawasaki to design my logo. :D
