I wanted to try something different so I smoked a meatloaf (w/ hickory chips) this weekend. Turned out great and only took 2.5 hours. I tested a small sample (on point), let it rest and come down to room temp, then put it in the fridge overnight to firm up a bit. Yesterday I sliced it and put it in the frying pan with some butter to crisp up the outside. Ate it as a sandwich with an apple/broccoli slaw. Good stuff :pint:

Let's get this thing going. I got a Kamado Joe at Christmas, so I've been learning the ropes in the snow, rain, and wind so far this year. I tried my hand at some pork belly "burnt ends" today. I need to tweak the cooking time and flavors for sure, but not too bad.

The weather is finally climbing here, -1C today (30F for y'all) so I'm definetly smoking something in near future.

I just scored a gang of lump charcoal at Lowe's, 18 lb for $5 each!

Those burnt ends look amazing!

I've been banging out the cooks whilst eb has been down. Made up some burgers last weekend using a new recipe. Smoked them for an hour, then topped with gorgonzola, pickles, dijonnaise and bbq sauce in a brioche bun. Wasn't bad.

The smoker itself has been ordered and is currently being fabricated. Possibly finished. It has been delayed quite a bit (he was supposed to have it done Jan 26th). We spoke on Wednesday, and he said it is finished and should be with me next week, but I've kinda heard this before so I'm not too confident.

Once I get the cooking down pat, I'll be ordering the trailer to suit.
