Assuming it’s the goods gimme a plain Brooklyn style. Or a sausage and onion Sicilian. Or a pepperoni Detroit style, extra caramelized. Oh goodness.

Some Detroit style joints finally popping up in Pittsburgh, and had this the other night:
Packard Pepperoni with red sauce, mozzarella, pickled chiles, pepperoni, hot honey. The chiles and honey worked so well together.

^ this. Some sauce should be exposed to direct heat. Also, I’m from the school that chz should be a topping, not an island floating on top of the sauce. Now sauce not all the way to the crust, that’s just lazy

Chz will only slide if there’s too much, like an island. I’m partial to only a few pieces of fresh mozzarella spread around, like you do pep. Only in American do we load it up with all that chz
